What is chitosan?
Chitosan is a naturally occurring biopolymer derived primarily from the exoskeletons of crustaceans such as shrimp and crabs, as well as from the stems and leaves of certain plants and the cell walls of fungi. Structurally, it is a linear polysaccharide composed of N-acetylglucosamine and glucosamine units, with a molecular structure containing numerous hydroxyl and amino groups. Depending on the ratio of glucosamine units to N-acetylglucosamine units, chitosan can be classified as either low-acetylation or high-acetylation chitosan.
